Raspberry Jiggle Gelatin

  1. Put thawed Raspberries in a food processor or blender.
  2. Add orange juice and process until smooth.
  3. Place raspberries puree in sieve over a bowl.
  4. Allow to drain, and gently pressing to get all the juice.
  5. Place water in a saucepan.
  6. Sprinkle gelatin over water.
  7. Allow gelatin to soften for 5 minutes.
  8. Heat gelatin on low heat, stirring constantly until gelatin has dissolved.
  9. Add sweetner and stir.
  10. Pour gelatin mixture into orange-raspberry juice.
  11. Pour into an 8x8 baking dish.
  12. Add optional fruit at this time.
  13. Refrigerate for at least 2 hours.
