Mediterranean Salad Recipe
- 4-6 lg. tomatoes, cut into chunks
- 1 peeled cucumber, cut into chunks
- 1 can pitted black olives
- 1 purple onion, cut into rings
- 1/2 - 3/4 c. fresh minced cilantro
- Salt & pepper to taste
- 1 - 1 1/2 c. Blue cheese salad dressing
- Grated Parmesan cheese
- Toss together all ingredients except cheese.
- Refrigerateno longer than 1 hour before serving.
- Serve on bed of lettuce.
- Top with Parmesan cheese.
- Variation: Toss with vinaigrette instead of Blue cheese and top with grated Mozzarella.
