Cichorium Endiva - Endive Salad

  1. Remove the stalks and outer leaves of the endives.
  2. Wash the endives rapidly but thoroughly in luke-warm salted water and cut them into narrow strips.
  3. Rub the inside of a salad bowl with the garlic.
  4. Put the endive strips into the bowl and mix with the oil.
  5. In a small bowl, beat the liquids to blend, pour them over the endives.
  6. Add the onion and parsley and mix.
  7. Correct the taste, as needed.
