Quick-Glazed Pork
- 1 tbsp. oil
- 1 tsp. oil
- 4 boneless pork chops
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 1 medium onion
- .13 tsp. salt
- 2 c. cider
- 2 tbsp. Dijon mustard
- In 12-inch skillet, heat 1 tablespoon oil on medium-high.
- Sprinkle pork chops with 1/4 teaspoon each salt and pepper.
- Cook 6 minutes or until browned yet slightly pink in center, turning once.
- Transfer to plate.
- To skillet, add 1 teaspoon oil, onion, and 1/8 teaspoon salt.
- Cook 2 minutes, stirring.
- Add cider; cook 7 minutes to reduce by half.
- Stir in Dijon mustard.
- Spoon over pork.
