Simmered Potatoes
- 5 Potatoes (Irish Cobbler)
- 400 ml Dashi stock
- 3 tbsp Sake
- 3 tbsp Soy sauce
- 2 tbsp Sugar
- 2 tbsp Mirin
- Peel the potatoes and cut into 4 pieces.
- Put the dashi stock and potatoes into a pot and bring to a boil.
- Once boiling, add the sugar and cover with a drop lid.
- Simmer for 5 minutes.
- Add the remaining ingredients and let simmer for 15 minutes over medium-low heat.
- When the potatoes have softened, raise the heat to high and evaporate the liquid.
