Cheese Muffins for Breakfast
- 200 grams Pancake mix
- 1 Egg
- 140 grams Plain yogurt (no need to drain)
- 30 grams Mayonnaise
- 3 to 4 add more if you like Processed cheese
- 10 grams Grated cheese
- 1 dash Black pepper (optional)
- Preheat the oven to 180C.
- Dice the cheese to 1 cm cubes.
- Crack an egg into a bowl and beat well.
- Add yogurt (without draining) and mayonnaise.
- Mix well.
- Then, add pancake mix and grated cheese.
- Mix lightly.
- Add the rest of the cheese (leave some for decorating) and mix lightly.
- Line molds with parchment paper.
- Pour in the batter and top with the remaining cheese.
- Bake for 15 to 20 minutes.
- Please adjust baking time to your oven.
- You could mix black pepper into the batter to make it a more refined for adults Great for lunch and/or with wine!
