Turnip With Apple Recipe

  1. Peel turnip, removing a thick peeling and leaving no sign of green (the bitterness is between the peeling and the vegetable).
  2. Slice into medium sized pcs.
  3. Place in a saucepan and pour boiling water on top.
  4. There should be at least 3 inches of water in pan.
  5. Cover and boil quickly for 15 to 20 min.
  6. Never let the turnips change color as this means they are over cooked.
  7. Drain well.
  8. Mash turnip and add in applesauce, a good sized piece of butter and salt and pepper.
  9. Whip till light.
  10. (Also good with cooked pears).
