Cornbread Stuffing W/Sausage
- 1 lb Jimmy Dean sausage (we like Hot)
- 4 tablespoons butter or 4 tablespoons margarine
- 3 -4 celery ribs, diced
- 1 large onion, finely diced
- 1 (14 1/2 ounce) can chicken broth
- 1 teaspoon black pepper (to taste)
- 1 (16 ounce) package cornbread stuffing mix
- 34 cup water
- salt
- Heat frying pan over medium high heat.
- Add sausage and cook until browned, stirring and breaking up sausage.
- Remove sausage from pan with slotted spoon and pour off all but 2 Tblsp.
- drippings.
- Add butter, celery and onion; cook, stirring occasionally until vegetables are browned.
- Stir in chicken broth, pepper, salt and water; heat to boiling, stirring to loosen browned bits from pan.
- In a large bowl, put stuffing mix and cooked vegetables.
- Gently mix together.
- Spray 9 x 13-inch casserole dish with cooking spray.
- Spoon stuffing in dish and cover with foil Bake at 325* for about 45 minutes or until stuffing is heated through.
