Butterscotch Pie
- 3 Tbsp. flour
- 1 Tbsp. sugar
- 1 c. packed brown sugar
- 3 egg yolks
- 1 c. milk
- 3 Tbsp. water
- 2 Tbsp. butter
- 1/8 tsp. salt
- 1 tsp. vanilla extract
- 1 baked 9-inch pie shell
- 2 egg whites
- 1/4 c. sugar
- Combine flour, 1 tablespoon sugar, brown sugar and egg yolks in saucepan; mix well.
- Add milk, water, butter and salt.
- Cook over low heat until thickened, stirring constantly.
- Stir in vanilla. Spoon into pie shell.
- Beat egg whites in mixer bowl until soft peaks form.
- Add remaining 1/4 cup sugar gradually, beating until stiff peaks form.
- Spread over top of pie, sealing to edge.
- Bake at 325u0b0 for 15 minutes or until lightly browned.
- Yield:
- 6 servings.
