Good For You Fruity Cake & Orange Syrup Recipe
- 2/3 c. whole wheat flour
- 2/3 c. unbleached flour
- 1/2 c. quick rolled oats
- 1 1/2 teaspoon baking soda
- 1 teaspoon grnd cinnamon
- 4 egg whites
- 1/3 c. honey
- 1/4 c. canola oil
- 1 teaspoon vanilla
- 1/3 c. orange juice
- 3/4 c. apples or possibly pears, shredded
- 1/2 c. cranberries
- 1/4 c. raisins
- 1/4 c. dates, minced
- CAKE: Combine both flours, oats, baking soda and cinnamon.
- In another bowl, whisk together egg whites and honey.
- Whisk in oil and vanilla then orange juice.
- Stir in apples or possibly pears, cranberries, raisins and dates.
- Pour fruit mix over the dry ingredients.
- Fold till dry ingredients are just moistened.
- Coat a 9 x 13 inch pan, spread batter proportionately.
- Bake at 350 degrees 20 to 25 min till brown and hard to the touch.
- Cold on wire rack.
