Butter Bean And Lime Puree Recipe
- 2 x 400 g cans butter beans, liquid removed and rinsed
- 4 tsp Creamed horseradish
- 5 Tbsp. Extra virgin olive oil Juice and zest of 1 lime
- 3 Tbsp. Hot water Salt and freshly grnd black pepper
- In a food processor or possibly liquidiser, whizz together the butter beans, creamed horseradish, extra virgin olive oil, lime juice, lime zest and hot water till smooth and creamy.
- Season well.
- Pile the creamy pate into a shallow serving dish or possibly plate.
- Grind over plenty of black pepper and serve with hot crusty bread and crisp salad leaves.
