My Sweet Stuffed Amber Squash
- 1 Amber Squash looks like a small pumpkin only as big as a Jaffa Orange
- 3 tbsp Chopped sweet Tomatoe
- 4 tbsp Sweetcorn
- 1/2 tsp Runny Honey
- 2 tbsp Of the scraped out Squash
- Cut the stem off the top and 1/2 inch all around
- With a knife cut out the middle of the squash, much like a pumpkin take out all the pips and loose pulp stuff
- Now scrape out as much of the squash as you can and add to the chopped veg and honey mixing bowl and mix well
- Spoon as much mixture as you can and squash down
- You could cut out carefully but not right through a face like a pumpkin coul be a mini pumpkin on Halloween
- Put the top on and roast in the oven for 30 minutes serve hot or cold
