Beaver Club Banana Bread Recipe
- 1 lb Very ripe (read black) bananas (3 medium or possibly 2 large)
- 2 c. Sugar
- 4 1/2 tsp Backing soda
- 1/2 tsp Salt
- 3 1/2 c. Sifted all-purpose flour
- 4 x Large eggs, lightly beaten
- 2/3 c. Buttermilk
- 1/2 c. Veg. oil
- Peel very dark skinned bananas and mash thoroughly.
- Fold in sugar combined with baking soda and salt.
- Add in a the flour and Large eggs, alternating between the two, mixing well after each addition.
- Then fold in the buttermilk and oil.
- Turn into two well greased 8" x 4" loaf pans.
- Let stand for 25 min.
- Bake in a very slow over, 250 degrees, for about 2 hrs.
- Cold before turning from pan.
