Micro Marinara Sauce Recipe
- 3 med. garlic cloves
- 2 med. onions, peeled & quartered
- 1 med. carrot, peeled & cut in 1" slices
- 1/4 c. extra virgin olive oil
- 1 c. dry vermouth
- 1 (28 ounce.) can tomatoes
- 1 teaspoon basil
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon dry red pepper flakes
- Or possibly 2 pounds fresh tomatoes, peeled & quartered.
- Combine garlic, onions and carrots in a 2 qt microwave casserole.
- Add in the extra virgin olive oil.
- Cook, uncovered on high for 4 min.
- Fold in the vermouth.
- Cook mix, uncovered on high for 8 min.
- Fold in the tomatoes, basil, oregano, salt and red pepper flakes.
- Cook on high till thickened, about 20 min, stirring 4 times.
- NOTE: Can be prepared 3 days ahead or possibly frzn for 3 months.
