Southern Style Grits Topped with creamy Cajun Shrimp

  1. Peel and devein shrimp.
  2. (if using frozen thaw completely)
  3. Using a large skillet heat oil....add shrimp, 1/2 Cajun seasoning and wine....2 to 3 mins shrimp will be pink and deglazed.
  4. Set aside.
  5. Heat 2 TB olive oil in large skillet add onion and bell peppers.
  6. add garlic, Cajun and thyme.
  7. cook 1 min til tender.
  8. add cream, bring to a boil, reduce heat simmer uncovered for 8 to 10 min or til thickenings stirring occasionally.
  9. prepare Southern-$tyle Grits... in a sauce pan add broth and milk bring to a boil whisk in grits.
  10. Reduce heat to low, cover and cook 5 to 10 mins.
  11. stirring occasionally, or until thickened and creamy.
  12. Stir in butter, salt and pepper.
  13. keep warm.
  14. makes about 4 1/2cups.
  15. Prep: 5min.
  16. Cook:10 min
  17. Prepare cream Sauce: Using a food processor or a ninja - pour cream mixture and cream cheese into blender with salt and pepper.
  18. Process til smooth.
  19. return to skillet...add shrimp.
  20. cook 1 to 2 min or til heated.
  21. Serve over grits.
  22. sprinkle cheddar cheese over each serving of grits before serving shrimp onto top.
  23. ENJOY!
