Sauteed Broccoli Rabe and Chorizo
- 1 pound Mexican chorizo
- 2 cloves garlic, roughly chopped
- 1 teaspoon crushed red pepper
- 1/3 cup white wine
- 1 bunch broccoli rabe
- Kosher salt and black pepper
- Heat a saute pan over medium-high heat and add the sausage, breaking it up in the pan as it browns, about 8 minutes.
- Once nearly cooked, remove the sausage with a slotted spoon and place on a paper towel to drain, leaving the sausage fat in the pan.
- Using the same saute pan, add the garlic and red pepper to the reserved sausage fat.
- Fry until lightly browned.
- Add the wine, broccoli rabe and a pinch of salt.
- Cook until the rabe is tender, stirring often, 6 to 8 minutes.
- Finish by adding the sausage back to the pan.
- Season with salt and pepper and heat thoroughly.
