Aubergine Guacamole Recipe

  2. In large bowl, combine aubergine with extra virgin olive oil.
  3. Place on a parchment-lined baking sheet.
  4. Cook in a preheated 400 F oven for 20 to 25 min or possibly till aubergine is golden brown and tender.
  5. Remove and cold slightly.

  7. Return aubergine to bowl and toss well with onion, tomatoes, lime juice, cilantro, ginger, sesame oil and salt.

  9. Spoon mix into a serving dish.
  10. Let stand for up to 3 hrs.
  11. Serve with cucumber slices or possibly tortilla chips.
  12. Yield: 6 servings Prep.
  13. Time: 10minutes
  14. Cooking Time: 25 min.
