Aubergine Guacamole Recipe
- 2 x Oriental aubergines or possibly 1 md. aubergine, cut in 1/2 inch cubes
- 1 Tbsp. Extra virgin olive oil
- 1/4 c. Finely diced red onion
- 3 x Tomatoes, seeded and minced
- 2 Tbsp. Lime juice
- 2 Tbsp. Finely minced fresh cilantro
- 1 tsp Finely minced fresh ginger
- 1/2 tsp Sesame oil
- 1/4 tsp Salt Cucumber slices or possibly tortilla chips
- 1.
- In large bowl, combine aubergine with extra virgin olive oil.
- Place on a parchment-lined baking sheet.
- Cook in a preheated 400 F oven for 20 to 25 min or possibly till aubergine is golden brown and tender.
- Remove and cold slightly.
- 2.
- Return aubergine to bowl and toss well with onion, tomatoes, lime juice, cilantro, ginger, sesame oil and salt.
- 3.
- Spoon mix into a serving dish.
- Let stand for up to 3 hrs.
- Serve with cucumber slices or possibly tortilla chips.
- Yield: 6 servings Prep.
- Time: 10minutes
- Cooking Time: 25 min.
