Delicious Loaded Mashed Potatoes

  1. Cut potatoes into half inch cubes, then rinse well with cold water.
  2. If desired, peel first.
  3. I like the peels :)
  4. Add water to cover potatoes.
  5. Bring potatoes to a boil.
  6. Add the minced onion, chicken bouillon cubes, and garlic now.
  7. Let potatoes boil about 25-30 minutes, until they can be squished easily
  8. While waiting for the potatoes, chop the green onion and fry the bacon until crisp, so you can easily crumble with a fork.
  9. Drain the potatoes.
  10. Return to pot and add milk, butter, and salt.
  11. Mash potatoes to desired consistency.
  12. For creamier potatoes, add a little more milk.
  13. Mix in the bacon, green onions, and cheese until blended.
  14. Alternately, you can just top the potatoes when you add the sour cream.
  15. This is unmixed topping.
