Passionately Delicious Haupia Tropical Pie

  1. Prepare frozen pie crust per instructions.
  2. Haupia Filling:.
  3. Combine water to cornstarch, set aside.
  4. In a saucepan, add coconut milk, sugar, and salt.
  5. Bring almost to a boil and add cornstarch mixture.
  6. Lower heat while whisking mixture until it is thick and smooth.
  7. Remove from heat and let stand a few minutes.
  8. Pour into pie shell and refrigerate until haupia sets.
  9. Topping:.
  10. Add water to cornstarch and mix until dissolved, set aside.
  11. In a saucepan, add concentrate and sugar and bring almost to a boil.
  12. Remove from heat and add cornstarch mixture and stir continuously until mixture thickens.
  13. Cool slightly and pour or drizzle over chilled haupia filling.
  14. Chill until topping sets.
  15. Top with shredded coconut before serving.
