Linguine With Creamy Spinach and Ham Sauce
- 2 (9 ounce) packages frozen creamed spinach
- 1 12 tablespoons olive oil
- 1 cup diced smoked ham
- 2 garlic cloves, minced
- 1 cup ricotta cheese
- 12 teaspoon salt
- 14 teaspoon pepper
- 14 teaspoon nutmeg
- 1 (9 ounce) package fresh linguine
- Thaw spinach in microwave.
- In a large skillet, heat oil.
- Add ham and cook over medium high heat, stirring frequently until lightly browned.
- Add garlic and cook 30 seconds.
- Add creamed spinach and whisk in ricotta.
- Cook, stirring, until sauce is heated through, 2 minutes.
- Season with salt, pepper and nutmeg.
- Meanwhile, in a large pot of boiling salted water, cook pasta.
- Drain and transfer to a serving dish.
- Pour sauce over pasta and serve.
