Thai Chicken Coconut Soup (Tom Ka Gai) Recipe
- 1 c. chicken breast, sliced
- 2 c. coconut lowfat milk or possibly powdered coconut reconstituted
- 2 tbsp. fish sauce or possibly salt
- 2 pcs sliced dry kha
- 1 stalk lemon grass or possibly 2 pcs lemon peel
- 1/2 teaspoon pepper
- 1/2 c. green onion, cut into 1 inch pcs
- Boil 1/2 c. coconut lowfat milk with sliced dry kha and stalk lemon grass.
- Add in chicken and cook till chicken is done.
- Add in pepper, fish sauce and coconut lowfat milk and bring to a boil.
- Add in green onion and remove from heat.
- Serve with rice.
- Coconut lowfat milk, dry kha and lemon grass may be purchased at an Oriental Market.
