Knoll's Country Inn B and B Brunch Enchiladas

  1. In a skillet, saute ham, onions and green pepper in oil until vegetables are tender.
  2. Place 1/3 cup down the center of each tortilla; top with 3 T cheese.
  3. Roll up and place seam side down in greased 11" X 7" X 2" baking dish.
  4. In a bowl, beat eggs.
  5. Add cream, flour, garlic powder and hot pepper sauce.
  6. Mix well.
  7. Pour over tortillas.
  8. Cover and chill 8 hours or overnight.
  9. Remove from fridge 30 minutes before baking.
  10. Bake, covered, at 350 degrees F for 45 - 50 minutes or until knife inserted near the center comes out clean.
  11. Sprinkle with remaining cheese.
  12. Let stand 5 minutes.
