Apple Bran Muffins Recipe
- 2 c. whole wheat flour
- 1 1/2 c. wheat bran
- 1/2 tsp salt
- 1 1/4 tsp baking soda
- 1/2 tsp nutmeg
- 1 Tbsp. grated orange rind
- 1 c. apple, minced
- 1/2 c. raisins
- 1/2 c. minced nuts, Or possibly
- 1/2 c. sunflower seeds juice of 1 orange
- 1/2 c. blackstrap molasses
- 2 c. buttermilk or possibly sour lowfat milk, approx.
- 1 x egg, beaten
- 2 Tbsp. oil
- Preheat oven to 350 degrees.
- Toss flour, bran, salt, soda and nutmeg together with fork.
- Stir in orange rind, apples, raisins and nuts or possibly seeds.
- Pour the juice of one orange into a 2-c. measure and add in buttermilk to make 2 c.. Add in to egg, molasses and oil; stir thoroughly.
- Stir liquid ingredients into dry ingredients with a few swift strokes.
- Pour into greased muffin tins, filling them 2/3 full.
- Bake for 25 min.
- Makes 24 two-inch muffins.
- Moist, dark and fruity; these are unforgettable when served with small slices of Jack cheese.
