Three-Cheese Potato Souffle

  1. In a large bowl, combine the first nine ingredients.
  2. Beat egg yolks; stir into potato mixture.
  3. In a small mixing bowl, beat egg whites until stiff peaks form; gently fold into potato mixture.
  4. Transfer to a 2 quart souffle dish coated with nonstick cooking spray.
  5. Bake, uncovered, at 375F for 40-45 minutes or until golden.
  6. Serve immediately.
