Wok Stirred Mussels and Rice Stick Noodles Spicy Black Bean Sauce

  1. Coat a very hot wok with oil, add mussels and stir until they start to open.
  2. Add garlic, ginger, chilies and black beans.
  3. Stir quickly for 5 minutes.
  4. Deglaze with white wine and reduce by 50 percent.
  5. Add tomatoes, fish sauce, chicken stock and noodles, combine well.
  6. Add basil, chives and butter.
  7. Check for seasoning.
  8. Serve with lime half to be squeezed on mussels right before eating.
