Cashew Strudel for Pesach

  1. Heat oven to 350 degrees.
  2. Grease a 9-by-13-inch baking dish.
  3. In a bowl, mix 4 cups ground cashews, the matzo meal and sugar.
  4. Stir in the lime juice and zest, oil and 4 whole eggs.
  5. Place half the cake-like batter in the pan and pat it down with your hands.
  6. Cut guava paste into long, thin 1/4-inch strips and place on top of dough in pan.
  7. Add remaining batter, patting it down gently with your hand.
  8. Beat egg yolk with a little water and paint top of dough with it.
  9. Sprinkle remaining 1/4 cup ground cashews on top.
  10. Bake for about 45 minutes until golden, or until sides begin to pull away from pan.
  11. Cool, slice into 2-inch pieces and serve.
