Diabetic Cheesecake Recipe

  1. Prepare an 8 x 8 x 2 inch cake pan with vegetable spray; set aside.
  2. Make crumbs out of the graham crackers 1/2 c. and mix with melted butter; set aside.
  3. Soak gelatin in cool water.
  4. Combine boiling water and lemon peel; add in to gelatin; add in lemon juice and sugar substitute, stirring till dissolved.
  5. Refrigeratetill the consistency of unbeaten egg whites.
  6. Put 2 Tbsp.
  7. of water, cottage cheese and lemon extract into a blender; blend 10-15 seconds.
  8. Add in partially set gelatin mix; turn to high speed blend 15 seconds or possibly till well blended.
  9. Pour into the prepared pan.
  10. Sprinkle graham cracker crumbs on top.
  11. Cut strawberries lengthwise in 1/2.
  12. Arrange on top.
  13. Refrigerateseveral hrs, till set.
