Wasabi Lime Crab Salad Mock Sushi

  1. PREPARE CUCUMBER CUPS.
  2. Cut cucumbers crosswise into generous 1/2 inch slices.
  3. Cut a fluted round from each slice using a cookie cutter, then scoop out some flesh from the center with a melon-ball cutter.
  4. LEAVE BOTTOM INTACT.
  5. FILLING.
  6. Whisk together mayo, wasabi paste and lime juice.
  7. Stir together wasabi mayo, crab, radish strips, and sprouts.
  8. Fill cucumber cups with filling and chill.
