Fried Eggplant

  1. Wash and slice your eggplants and set aside.
  2. Heat cooking oil to approximately 370F.
  3. Whisk eggs and milk together in a shallow dish.
  4. Place fish fry in a separate shallow container.
  5. Dip eggplant slices in the egg/milk mixture then into fish fry to coat.
  6. Place coated eggplant in the hot cooking oil until golden brown.
  7. Drain on paper towels to absorb excess oil.
  8. Enjoy!
