Salmon Patties
- 2 cans (15 Oz. Size) Boneless Pink Salmon
- 4 Green Onions, Chopped
- 2 Tablespoons Chopped Parsley
- 1 Tablespoon Fresh Lemon Juice
- 1 Tablespoon Flour
- 2 cloves Garlic, Minced
- 1 Tablespoon Fresh Dill, Chopped
- 1 teaspoon Salt
- 1/2 teaspoons Pepper
- 2 Tablespoons Canola Mayonnaise
- 2 Eggs, Lightly Beaten
- 1 cup Saltine Cracker Crumbs
- 3 Tablespoons Vegetable Oil
- In small bowl combine salmon, onion, parsley, lemon juice, flour, garlic, dill, salt and pepper.
- Stir in mayo, eggs and bread or cracker crumbs.
- Shape into 12 patties.
- Heat oil in skillet over medium heat.
- Once oil is hot, cook patties for about 4 minutes on each side, or until lightly browned, turning gently.
- Remove from the oil once they are cooked, and drain on a paper towel lined plate to drain.
