Christmas Rum Pie
- 1 tablespoon unflavored gelatin
- 14 cup cold water
- 12 cup sugar
- 12 teaspoon salt
- 1 14 cups milk
- 3 egg yolks
- 2 teaspoons rum extract
- 1 cup cream, whipped or 1 cup Cool Whip
- 3 egg whites
- 12 cup sugar
- 14 teaspoon cream of tartar
- 2 pre baked pie crusts
- Dissolve gelatin in cold water.
- Cook Sugar, salt and milk over low heat just until it coats a spoon.
- Mixture will be thin.
- Pour over slightly beaten egg yolk, add gelatin, mix well and cool by placing in cold water bath.
- While the mixture is cooling, beat egg whites with sugar and cream of tartar until stiff.
- After mixture has cooled, add rum extract, cool whip and beaten egg whites, stirring thoroughly.
- Pour into prebaked pie shells.
- Sprinkle with nutmeg and refrigerate.
