Zucchini Bread

  1. Sift together flour, baking powder, baking soda, salt and cinnamon.
  2. Set aside.
  3. Beat eggs and sugar for 2 minutes. Gradually add oil and beat 2 minutes.
  4. Add extract.
  5. Alternately fold in flour mixture and zucchini until evenly
  6. moistened.
  7. Stir in pecans and raisins.
  8. Do not overmix.
  9. Pour into well-greased or sprayed loaf pan.
  10. Bake at 350u0b0 for 1 hour and 10 minutes or until it tests done.
  11. Cool 10 minutes.
  12. Remove from pan.
  13. Cool.
