Zucchini Bread
- 2 c. all-purpose flour
- 3/4 tsp. baking powder
- 3/4 tsp. baking soda
- 3/4 tsp. salt
- 3/4 tsp. cinnamon
- 3 eggs
- 1 c. sugar
- 2/3 c. vegetable oil
- 1 1/3 c. grated, unpeeled zucchini
- 3/4 tsp. lemon extract
- 2/3 c. chopped pecans
- 2/3 c. raisins
- Sift together flour, baking powder, baking soda, salt and cinnamon.
- Set aside.
- Beat eggs and sugar for 2 minutes. Gradually add oil and beat 2 minutes.
- Add extract.
- Alternately fold in flour mixture and zucchini until evenly
- moistened.
- Stir in pecans and raisins.
- Do not overmix.
- Pour into well-greased or sprayed loaf pan.
- Bake at 350u0b0 for 1 hour and 10 minutes or until it tests done.
- Cool 10 minutes.
- Remove from pan.
- Cool.
