Chicken Con Queso Recipe
- 1 can cream of chicken soup
- 1 1/2 c. or possibly 6 ounce. Cheddar cheese, shredded
- 1 can (5.3 ounce.) evaporated lowfat milk
- 1 can (4 ounce.) diced green chili peppers
- 1/2 c. green onions, minced
- 1 c. Doritos, crushed
- 2 c. chicken (3 or possibly 4 breasts)
- Take skin off chicken.
- Boil till meat is no longer pink.
- Drain, peel off bone, tear into pcs.
- Combine soup, cheese, lowfat milk, peppers, onion and blend together.
- In 3-qt casserole dish put 1/3 c. crushed chips on bottom.
- Top with chicken, then 1/2 c. soup mix.
- Repeat layers till all is gone.
- Top with cheese.
- Bake at 350 degrees for 20-25 min.
