Bacon And Herb Stuffed Mushrooms Recipe
- 4 lrg flat mushrooms
- 25 gm butter
- 1 med onion peeled and minced
- 1 clv garlic peeled and washed
- 4 x rashers smoked pack bacon de rinded and diced
- 75 gm fresh white breadcrumbs
- 50 gm Cheddar cheese grated
- 1 Tbsp. freshly minced parsley
- 1 x salt and freshly grnd black pepper Freshly squeezed juice of 1/2 lemon
- 75 ml vegetable stock
- Wipe the mushrooms and carefully remove the stalks.
- Finely chop the stalks.
- Heat the butter in a frying pan add in the onion garlic and minced mushroom stalks and cook together for 3 min.
- Add in the bacon to the pan and cook for a further 3 min.
- Remove from heat and stir in the breadcrumbs cheese parsley seasoning and lemon juice.
- Arrange the mushrooms in a lightly greased ovenproof dish and divide the stuffing between them.
- Pour in the stock around the mushrooms to prevent them from drying out.
- Cook in a preheated oven at 200 degrees C/ 400 degrees F/Gas Mark 6 for 20 min till golden brown and crispy Serve immediatelyDo not freeze.
