Gingered Banana Crepes

  1. In a large skillet, melt butter.
  2. Stir in sugar and ginger, stirring until sugar is melted.
  3. Stir in cream; boil 1 minutes.
  4. Add banana slices; heat through, about 1 minute.
  5. Warm crepes lightly.
  6. Spoon 1/3 cup filling on one half of each crepes; fold other half over.
  7. Drizzle melted chocolate over the folded crepes and dust with confectioners' sugar.
  8. Serve while still warm.
  9. Tip: you can generously brush or drizzle the warm crepes with banana liquor for a grown up taste, before you add the filling.
