Blackened Wahoo

  1. Cut fish fillets into palm-sized portions.
  2. Melt butter in a microwave safe dish.
  3. Heat a cast iron skillet on medium-high heat (we use the burner on the grill outside, because the butter tends to smoke a lot!).
  4. While pan is heating, dredge fillets through melted butter.
  5. Sprinkle as much blackened seasoning as you like on each side.
  6. (We like a lot, because we like spice.)
  7. Sear fish for 1 minute (or until crispy) on each side.
  8. If fillets are thick, place in a deep pan and bake at 350F for 5-10 minutes until done.
  9. (We usually do this because we are such awesome fishermen that our fillets are huge ...
  10. haha!)
  11. I found the Cajun Classiques seasoning at Publix and the King Kooker Blackened Redfish Seasoning at Bass Pro Shop.
  12. If you cant find these, any blackening seasoning should do.
