Blackened Wahoo
- 4 pieces Wahoo, Snapper, Or Other Saltwater Fish
- 1/2 sticks Unsalted Butter
- Blackened Seasoning (Cajun Classique Or King Kooker), To Taste
- Cut fish fillets into palm-sized portions.
- Melt butter in a microwave safe dish.
- Heat a cast iron skillet on medium-high heat (we use the burner on the grill outside, because the butter tends to smoke a lot!).
- While pan is heating, dredge fillets through melted butter.
- Sprinkle as much blackened seasoning as you like on each side.
- (We like a lot, because we like spice.)
- Sear fish for 1 minute (or until crispy) on each side.
- If fillets are thick, place in a deep pan and bake at 350F for 5-10 minutes until done.
- (We usually do this because we are such awesome fishermen that our fillets are huge ...
- haha!)
- I found the Cajun Classiques seasoning at Publix and the King Kooker Blackened Redfish Seasoning at Bass Pro Shop.
- If you cant find these, any blackening seasoning should do.
