Jds Caramelized Buffalo Wings

  1. Cut up wings, Rinse wings thoroughly and pat dry.
  2. Heat oil in large skillet to 375F using thermometer.
  3. Fry wings in batches to ensure they dont stick together.
  4. This should take about 6-8 minutes.
  5. Melt butter and add all ingredients.
  6. Adjusting Tabasco and cayenne pepper to taste for desired hotness.
  7. Place cooked wings on paper towel and pat excess oil off the wing.
  8. Hold wings already cooked in warming oven (200F).
  9. Take a batch of wings and dip in wing sauce.
  10. Shake excess wing sauce off and place back in oil for one two minutes.
  11. You will see the wing sauce caramelize to the wing.
  12. Remove wings from oil.
  13. Dip the wings in the sauce and serve with celery, carrots, and blue cheese.
  14. ENJOY!
