Fruit Glazed Salmon
- 4 whole Salmon Fillets (about 8 Oz. Each)
- 2 Tablespoons Oil, Divided
- 1 clove Garlic, Minced
- 1 cup Jelly Or Jam, Any Flavor
- 2 Tablespoons Orange Juice, Or 1/2 Lemon, Juiced
- 1/2 cups Water
- Salt And Pepper

- Preheat oven to 400 F.
- 2.
- Place fillets (if skin on, lay them skin side down) on lightly oiled foil or baking sheet.
- Sprinkle fillets with 1 tablespoon oil, salt and pepper.
- 3.
- In a small pot, heat the remaining 1 tablespoon of oil, and saute garlic until it begins to soften.
- Add jelly/jam, lemon/orange juice and water.
- Stir to combine and simmer and reduce for 2 minutes.
- 4.
- When jam mixture is cool, brush over salmon fillets and place in the oven.
- Bake for 4 minutes.
- Brush more jam on the fillets, turn up oven to broil and bake for another 3 minutes.
- Note: salmon is done when you see a white substance secreting fom it.
