Spicy Beans and Rice (Core)

  1. In 2 qt microwave safe dish, combine first six ingredients.
  2. microwave on high for 5-7 minutes or until water is absorbed.
  3. stir in beans, mexicorn, tomatoes and salsa.
  4. top with cheese.
  5. cover and microve on high for 2-3 minutes.

brown rice, water, garlic, ground cumin, pepper, red kidney beans, mexicorn, tomatoes, salsa, cheddar cheese
