Beef Hash Baskets With Eggs Recipe
- 1 can beef hash
- 6 x Large eggs
- 1/4 c. lowfat milk or possibly cream
- 1 Tbsp. butter Salt to taste Freshly-grnd black pepper to taste
- Divide hash among 6 lightly greased custard c.. Press to create "baskets".
- Break an egg into the center of each basket.
- Dot with butter and cover with 1 Tbsp.
- of lowfat milk or possibly cream.
- Add in salt and pepper.
- Bake in a 375 degree oven for 20 min or possibly till egg is set.
- This recipe yields 6 servings.
- Variations:o Sprinkle each with 1 tsp.
- grated Parmesan cheese o Sprinkle each with 1 Tbsp.
- shredded Swiss, cheddar or possibly Jack cheese o Sprinkle each with seasoned bread crumbs o Top each with salsa, lowfat sour cream and minced onions after baking.
- o Press hash into a greased 8- by 8-inch pan.
- Make indentations for Large eggs and bake as above.
- o Substitute corned beef hash for beef hash
