Curried Lima Beans
- 2 pkg. (1-1/4 lb. each) frozen baby lima beans
- 1 cup water
- 2 tbsp. unsalted butter
- margarine
- 1 md. onion, chopped
- 1-1/3 tbsp. curry powder
- 1/4 cup non-fat plain yogurt
- 1-1/3 tbsp. fresh lemon juice
- 1/4 tsp. coarse (kosher) salt
- 1/8 tsp. black pepper
- Bring the lima beans and water to a boil in a medium saucepan over high heat.
- Lower the heat; cover, and cook for 6 minutes.
- Drain and set aside.
- Melt the butter in the same saucepan over medium heat.
- Add the onion and curry powder.
- Cook, stirring occasionally, for 6 to 8 minutes or until the onion is tender.
- Stir in the lima beans until heated through.
- Remove from the heat.
- Stir in the yogurt, lemon juice, salt and pepper until well combined.
- Serve immediately.
