Bag 'o Beans and Beef Stew
- 2 lbs stewing beef
- 14 cup all-purpose flour
- 12 ounces mixed dried beans (black beans, lentils, pintos, kidney)
- 1 large onion
- 2 lbs tomatoes
- 1 tablespoon oregano
- 3 teaspoons cumin
- 1 12 teaspoons chili powder
- salt & pepper
- 2 diced potatoes
- 2 diced carrots
- 12 cup sliced celery
- Wash beans thoroughly.
- Soak in salt water overnight then drain beans.
- Brown lightly floured stew meat in heavy pot.
- Add beans, onion, tomatoes, oregano, cumin, chili powder, salt and pepper to taste.
- Cover with cold water and bring to a boil.
- Reduce heat and simmer three hours.
- Add diced potatoes, celery and carrots.
- Simmer one hour longer or until vegetables are tender.
