Ambrosia Cake with Pineapple, Mandarin, and Cherry Frosting

  1. Dissolve gelatin in hot water.
  2. Cool a few minutes.
  3. Add gelatin to cake mix with all other ingredients.
  4. Mix about 2 minutes on medium speed.
  5. Pour into greased and floured 13 x 9 x 2 1/2 inch pan.
  6. Bake at 350F (180C) F for 30 to 45 minutes.
  7. FROSTING: Combine, pineapple with powdered sugar.
  8. Mix well and spread on hot cake.
  9. Sprinkle coconut over pineapple.
  10. Decorate top with five mandarin orange sections in a circle with a maraschino cherry in the center.
