Party Scalloped Potatoes
- 2 Tbsp. butter
- 1/4 c. onion, chopped
- 1/4 c. green pepper, chopped
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 c. milk
- 1 (8 oz.) carton Neufchatel cheese dip with bacon and horseradish
- 4 c. cubed potatoes, cooked and drained
- 1 (4 oz.) jar pimento, chopped
- 1 1/2 c. soft bread crumbs
- 1 Tbsp. snipped parsley
- 1 tsp. sesame seed
- 4 Tbsp. butter, melted
- Melt 2 tablespoons butter in skillet; add onion and green pepper.
- Cook over medium heat.
- Blend in flour, salt and pepper. Add milk; stir constantly until thick.
- Stir in cheese; blend well.
- In 2-quart casserole, pour preceding mixture over potatoes and pimentos.
- Mix bread crumbs, parsley, sesame seed and 4 tablespoons melted butter.
- Sprinkle over potatoes.
- Good with Honeyed Ham or beef.
