Doritos Chicken Casserole
- 1 medium Bag of Doritos (Nacho Cheese), crushed
- 1 large Green Bell Pepper
- 1 can Cream of Mushroom
- 1 dash Creole Seasoning
- 1 medium Red Onion
- 5 large Chicken Breasts (cut in cubes)
- 1 tbsp Pepper
- 1 tbsp Salt
- 1 packages Mexican Shredded Cheese
- 1 cup Chi-Chi's Mild Salsa
- Preheat oven to 350 F.
- Dice chicken, onion, and bell pepper.
- In a large skillet cook chicken, onions , and bell pepper.
- Add salt, pepper, and creole seasoning.
- Cook till chicken is no longer pink.
- When finished drain.
- In a large mixing bowl add drained chicken, onions, and pepper.
- Add cream of mushroom, and cup of salsa.
- In a large casserole dish add a layer of crushed Doritos.
- On top of that add a layer of shredded cheese.
- Add 1/2 cup of Doritos to the chicken mixture.
- Mix together until blended well.
- In the large casserole dish add the chicken mixture.
- Spread evenly throughout the dish.
- Next add a layer of Doritos.
- Top the casserole off with the remaining Mexican shredded cheese.
- Place in oven for approximately 20 minutes or until cheese is melted and looks crunchy.
- Remove from oven and let cool for about 10 minutes.
