Honey-Roasted Carrots with Sesame Seeds

  1. Preheat the oven to 450 degrees F. Line a baking sheet with foil and put in the oven to heat.
  2. Spread the carrots in a single layer on the hot baking sheet.
  3. Combine the olive oil and 1 tablespoon of honey in a small bowl and pour over the carrots.
  4. Sprinkle with 1 1/2 teaspoons salt and 1 teaspoon pepper.
  5. Roast the carrots until they start to blister, 10 minutes.
  6. Mix together the soy sauce and remaining 1 tablespoon honey in a small bowl.
  7. Drizzle the mixture over the hot carrots and toss to coat.
  8. Sprinkle with the chopped parsley and sesame seeds and serve.
