Jicama Berry Salad
- 2 cups sliced strawberries
- 1 cup jicama, peeled and cut into bite sized strips
- 3 tablespoons white wine vinegar
- 3 tablespoons orange juice
- 2 shallots, finely chopped
- 1 tablespoon of fresh mint, snipped
- 1 tablespoon olive oil
- romaine lettuce leaf
- Arrange sliced strawberries and jicama on top of the romaine leaves.
- For the dressing, in a screw top jar, combine vinegar, orange juice, shallots, mint and oil.
- Cover and shake well.
- Drizzle dressing over salad.
