Double Chocolate Banana Bread
- 2 cups all-purpose flour
- 13 cup baking cocoa
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 14 teaspoon baking soda
- 12 teaspoon salt
- 1 egg
- 14 cup vegetable oil
- 1 cup plain fat-free yogurt
- 2 medium bananas, diced
- 12 cup dark chocolate chips
- Preheat oven to 350 degrees.
- Grease a loaf pan.
- Whisk together flour, cocoa, sugar, baking powder, baking soda, and salt.
- In another bowl, beat together with a fork the egg, vegetable oil, and yogurt.
- Add the yogurt mixture to the dry ingredients, along with the banana and chocolate chips.
- Mix until just incorporated and uniformly moistened.
- Bake at 350 degrees for 55-70 minutes, checking for doneness with a toothpick.
- Remove from oven and let sit for 5 minutes.
- Remove to a wire rack and allow to cool completely.
