Pineapple Coconut Chess Pie Recipe
- 1 1/2 c. sugar
- 2 tbsp. all-purpose flour
- 4 lg. Large eggs, lightly beaten
- 1/4 c. butter, melted
- 1 (15 1/4 ounce.) crushed pineapple, liquid removed
- 1 (9") unbaked pie shell
- 3 tbsp. corn meal
- 1/4 teaspoon salt
- 1 teaspoon vanilla flavoring
- 1 (3 1/2 ounce.) can flaked coconut
- Combine first 4 ingredients in a large bowl.
- Add in Large eggs and vanilla, stirring till blended.
- Stir in butter, coconut and pineapple.
- Pour into unbaked pastry shell.
- Bake at 350 degrees for 1 hour or possibly till set.
- Cover with aluminum foil after 40 min.
