I hate Mondays, Lasagna!
- 2 lb ground beef (80/20)
- 8 oz fresh spinach (chopped)
- 8 oz mushrooms (chopped)
- 26 oz pasta sauce (I use mock marinara, will post the recipe seperately)
- 2 tbsp horseradish
- 1 tbsp lemon pepper
- 4 tbsp Italian seasoning
- 1 salt
- 1 pepper
- 1 tbsp oregano paste
- 1 tbsp basil paste
- 1 packages no boil lasagna noodles
- 32 oz mozarella
- 16 oz monterey cheese
- 16 oz Italian Blend cheese
- 2 eggs
- 24 oz Ricotta (cottage cheese may be used as a substitute, if used you will not need the eggs)
- Brown ground beef with horseradish, salt, pepper, Italian seasoning.
- Once the meat is browned add in the spinach, mushrooms and remaining seasonings.
- Cook over medium until mushrooms and spinach have cooked down.
- Whip 2 eggs in a bowl, add in ricotta cheese and parmesan.
- Mix thoroughly.
- Coat bottom of lasagna pan with marinara.
- Layer as directed on package of no boil lasagna.
- I use lots of cheese on each layer.
